Cook's tip

Dress the salad just before eating so the leaves stay crisp. No naan? Make croutons from baguette or sliced bread. Leftover tandoori chicken turns this into a 10-minute meal.

Cooking it at camp

Marinate the chicken at home, carry it in an iced cooler and cook it on the grill or in a cast-iron pan on a burner; pre-mix the dressing in a jar and keep it cold. Toast the croutons in the pan on site. Bring the romaine whole and tear it just before serving.
