Cook's tip
In a hurry? Prick the potatoes and microwave them for 6–8 minutes each, then crisp the skins in the oven or air fryer at 200 °C for 10 minutes. The tinga keeps for 3 days in the fridge, great for meal prep.
Cooking it at camp
Wrap the sweet potatoes in a double layer of foil and bury them in the ashes at the edge of the fire for 40–50 minutes; bring the tinga from home and reheat it on the burner. Keep the yogurt cold in the cooler.
