Cook's tip
Bone-in thighs stay juicier than breast, and their stock lifts the sauce enormously. Freeze leftover stock for soup. If your chorizo is salty, cut back on the salt in the sauce.
Cooking it at camp
Poach the chicken and make the sauce at home; at camp, just fry the chorizo and onion and combine everything to reheat over the flame for a smoky edge. Pack the pickles and crema in separate tubs in the cooler.
