Cook's tip

For crisp skin, the key is not to move or press the chicken while it cooks; starting it in a cold pan is fine too. The pickle tastes even better made a day ahead and keeps 3 days in the fridge.

Cooking it at camp

Make the pickle and ginger rice at home if you like. At camp, one cast-iron pan cooks and glazes the chicken; over a charcoal grill it picks up a smoky edge. Keep the chicken cold in the cooler.
