Lemongrass Rice-Water Tinola with Garlic Chips
Seared chicken legs simmered in a lemongrass and rice-water broth, finished with crisp garlic chips and a squeeze of calamansi.
Method
Rinse rice once and discard the water, then rub it in fresh water and keep this cloudy second rinse. Peel and core the chayote and cut it into wedges. Slice the ginger 0.5 cm thick and bruise it with the flat of a knife; bruise the lemongrass and tie it in a knot. Slice the shallots and cut the garlic as thinly as you can.
Put the oil and garlic into a cold 20 cm pot, set it over medium-low heat and stir for as the garlic gently fries. Lift it out onto kitchen paper as soon as it turns pale gold; it keeps darkening after it leaves the oil. Leave the garlic oil in the pot.

Cook's tip
Starting the garlic in cold oil makes it crisp evenly without bitterness. No rice water? Simmer 1 tablespoon of raw rice in plain water for a similar softness. Don't stir while it simmers if you want a really clear broth.
Cooking it at camp
Fry the garlic chips at home and carry them in an airtight box; at camp you only sear and simmer. Collect the rice water when you rinse rice for dinner. A wide, heavy pot lets a camp burner brown the skin properly.
