Cook's tip
Drying the rice cakes completely means less spitting and an even starch coat that fries up crisp. They firm up as they cool, so eat them straight away. For kids, skip the chili flakes and add a little more ketchup.
Cooking it at camp
Mix the glaze at home in a jar and one pan on the burner does the frying and tossing. Instead of the dip, lay cheese slices over the glazed rice cakes and cover until melted. Hot oil can spit, so cook well away from the tent.
