Method

  1. If the rice cakes are hard, soak them in cold water for 10 minutes to soften (soft ones can be used straight away). Cut the fish cakes into bite-size triangles, the cabbage into 3 cm pieces, the onion into 1 cm strips and the green onion diagonally into 4 cm lengths. Pull the heads and dark guts off the anchovies. In a small bowl, mix the gochujang, chili flakes, sugar, syrup, soy sauce and garlic to make the sauce.

Cook's tip

Rice-flour cakes are chewier; wheat-flour cakes are softer and soak up the sauce more. Rice cakes harden as they cool, so eat it straight away. For less heat, leave out the chili flakes and add a little more sugar.

Cooking it at camp

It's ideal cooked straight in a wide camp pot or griddle pan on a burner. Mix the sauce at home and carry it in a jar, and boil the eggs beforehand, so it takes only 10 minutes at camp. A stock cube or even plain water instead of anchovy broth still tastes great.
