Cook's tip
Miso brands vary a lot in saltiness: start with two-thirds of the amount and add the rest after tasting. Brown shiitake well; their savoury depth is what links the Belgian sauce and Japanese flavours. Also lovely over steamed rice.
Cooking it at camp
Mix the chicken with its marinade at home and carry it in a sealed bag in the cooler. Cook the filling in a pan on the camping stove; without an oven, crisp the shells in a dry, covered pan for a minute, or spoon the filling over rice or bread.
