Cook's tip

A great way to use leftover vol-au-vent ragout: simply let it cool so it thickens, then spread it on the toast. Brioche makes it sweeter and richer; sourdough makes it crisper. Add a fried egg on top for a café-style brunch.

Cooking it at camp

Make the ragout at home and carry it chilled in the cooler. At the campsite, toast the bread in a pan, spread on the warm ragout, top with cheese and cover the pan on low heat until it melts, or toast it closed in a sandwich iron over the fire.
