Cook's tip

Make the pickles and onion jam a day ahead and keep them in the fridge, and the sandwich comes together in 5 minutes. Red onion works instead of daikon, and sriracha instead of fresh chilli. Shredded leftover chicken yassa makes a great filling too.

Cooking it at camp

Pack the pickles and onion jam from home in sealed tubs and keep the marinated chicken in the cooler. At the campsite, grill the chicken and toast the baguette briefly on the grate.
