Cook's tip

Dip the tortillas in the red fat on top rather than the broth itself, so they crisp instead of going soggy. Adjust the heat with the chilli flakes. Leftover consommé makes a great base for ramen or udon.

Cooking it at camp

Make the beef and consommé at home and carry them in an iced cooler. At the campsite bring the consommé to a hard boil for at least 1 minute and just griddle the tacos on a plancha or skillet.
