Cook's tip

Not rinsing the noodles keeps their surface starch, which grips the sauce. For more heat add sliced fresh chilli; to soften it, serve with a spoonful of mayonnaise. For a cold version, rinse the noodles in iced water before tossing.

Cooking it at camp

Mix the chilli oil and sauce at home and bring it in a jar; at the campsite you only need one burner to stir-fry the beef and boil the noodles. Keep the eggs and beef in the cooler and cook the beef right through.
