Cook's tip

Drain the rinsed noodles very well or the dressing will turn watery. The tender upper stalks of the herbs are full of flavour, so use them too. Herbs wilt once dressed, so toss just before eating.

Cooking it at camp

Cook the noodles at home, toss them with a little olive oil and pack them in a tub, with the washed herbs wrapped in kitchen paper; at camp just toss everything and warm the mint oil on the burner.
