Kimchi Bulgogi Breakfast Burrito
A Korean-American camp breakfast: sweet-savoury bulgogi beef, kimchi fried rice, soft eggs and stretchy mozzarella rolled in a tortilla with a kick of gochujang mayo.
Method
Cut the beef into bite-sized strips if needed and mix it with the soy sauce, sugar, garlic and sesame oil in a zip bag or lidded box. Leave it in the cooler for while you prepare the rest. In a small bowl, stir the mayonnaise and gochujang together until smooth.

Heat a third of the oil in a 26 cm skillet over medium heat. Beat the eggs with the salt, pour them in and stir gently for , until just set into soft curds. Slide them onto a plate.

medium heatAdd another third of the oil and turn up to medium-high heat. Lay the beef in a single layer (in two rounds if it does not fit) and leave it for 1 minute to brown, then toss for in total, until no pink remains and the edges are caramelised. Add it to the egg plate.

medium-high heatAdd the remaining oil and set the heat to medium heat. Chop the kimchi into small pieces and stir-fry for , until it smells toasty and its juice has mostly cooked off. Add the rice, break up any clumps and cook for , pressing it against the pan and stirring, until piping hot and lightly crisp in places.

medium heatTip the rice onto a plate and wipe the skillet. Over medium heat, warm a tortilla for 20 seconds, flip it, scatter over its share of the mozzarella and cover for about 30 seconds until melted; in total for all of them. Slide onto foil.

medium heatOn each tortilla, layer kimchi rice, beef and egg across the lower third, then add sliced spring onion and a stripe of gochujang mayo. Fold in the sides and roll up tightly. Cook's tip
Older, sourer kimchi is best for frying; very fresh kimchi tastes flat. If the beef is hard to slice thinly, half-freeze it at home first, or use ground beef and cook it until crumbly. Taste the gochujang mayo: add more gochujang for heat, or a pinch of sugar if it tastes too sharp.
Cooking it at camp
Marinate the beef at home and freeze it flat in a zip bag: it doubles as an ice pack and has thawed in the cooler by the next morning. Bring the cooked rice cold in the cooler. Everything cooks in one skillet on a camp stove; on a grill, set the skillet on the grate and cook the eggs at the cooler edge. Foil-wrapped burritos stay warm for 20 minutes.
