Hot Honey Hash Brown Fold-Over Wrap
A pleated, pan-toasted tortilla parcel hiding a crisp hash brown, sage sausage patty, fried egg, melted cheddar and a crunchy corn tortilla, finished with chilli-spiked hot honey.
Method
Grate the potatoes on the coarse side of a grater, wrap them in a clean tea towel and twist hard until no more liquid drips out; dry potato is the secret to a crisp hash brown. Toss with the potato salt. In another bowl, mix the pork with the sage, sausage salt and pepper, and shape it into thin patties 10 cm wide, one per wrap.

Put the honey and red pepper flakes in a small pan or metal cup and warm over low heat for , just until runny and steaming, not boiling. Take it off the heat and leave to infuse.

low heatHeat about a third of the oil in a 26 cm skillet over medium heat. Fry the corn tortillas one at a time, about 30 seconds per side, until crisp, golden and stiff, in total, and drain on paper towel. This crunchy layer is what makes the wrap crackle when you bite it.

medium heatAdd half of the oil and turn up to medium-high heat. Drop in the grated potato in mounds and press each into a thin round about 12 cm wide. Hash browns in the pan at a time: 2 (a '+' means two rounds). Fry without moving for , until deep golden and crisp underneath, then flip and fry for more. Drain on paper towel. Lower the wet potato in gently, as the oil will spit.

medium-high heatAdd the remaining oil, turn down to medium heat and cook the sausage patties for , turning once, until browned with no pink left in the centre (71 °C). Push them to one side, crack in the eggs, break the yolks with the spatula, sprinkle with the egg salt, cover and fry for , until the yolks are fully set and the eggs are flat and round.

medium heatWarm each flour tortilla in the skillet for 10 seconds per side so it folds without cracking. In the centre, stack a hash brown, cheese, sausage, egg and a crisp corn tortilla, and drizzle with a little hot honey. Fold the edge of the flour tortilla up over the stack in 5 or 6 overlapping pleats, all the way round, to close it. Place it pleated-side down in the skillet over medium heat and toast for until golden and sealed, then flip and toast for . Wraps in the pan at a time: 2 (a '+' means two rounds). Cut in half and drizzle with the remaining hot honey.

Cook's tip
Squeezing the potato is the step people skip, and the hash brown then steams into a soggy pancake. Keep the stack slightly smaller than the corn tortilla so the pleats close easily. Hot honey is also excellent on plain fried eggs or bacon.
Cooking it at camp
Shape the sausage patties at home and stack them between baking paper in a cooler below 5 °C. Grate and squeeze the potatoes at camp, as grated potato turns grey within an hour, or bring frozen hash brown patties and cook them from frozen. Everything is made in one skillet on a camp stove; on a grill, set the skillet on the grate. Carry the used oil home in a can once it has cooled.
