Chorizo and Crispy Potato Breakfast Burrito with Charred Jalapeño
Spicy chorizo, potatoes crisped in its red fat, slow-stirred buttery eggs and melted Jack with smoky charred jalapeño, fresh pico de gallo and avocado, toasted seam-side down until golden.
Method
Hold the jalapeños with long tongs directly in the camp-stove flame on high heat for , turning, until blackened and blistered all over. Seal them in a bag or covered bowl for 5 minutes so the skin loosens, then rub it off, remove the seeds and dice finely. For the pico de gallo, seed the tomatoes and cut into 1 cm dice, finely chop half of the onion and the cilantro, and mix with the lime juice and about a third of the salt.

The melted cheese layer glues the filling in place and keeps the tortilla from going soggy.

Cook's tip
Mexican chorizo is raw and must be cooked through; Spanish chorizo is cured and too firm to crumble, so if that is all you have, dice it small and fry it for just 2 minutes. Remove the jalapeño seeds and white ribs for gentle heat, or keep a few for a kick. Wear gloves or wash your hands well after handling the chillies.
Cooking it at camp
You can char the jalapeños and make the pico at home; pico keeps for a day in the cooler. Carry the chorizo, eggs, butter and cheese in a cooler below 5 °C. On a charcoal grill, set the skillet straight on the grate and slide it to the edge of the coals for the gentle egg stage. Wrapped in foil, the burritos stay warm for 20 minutes or reheat on a grate. Let the chorizo fat cool, then pack it out in a can.
