Cook's tip

The beef must be shabu-shabu thin so it cooks tender in moments. For a stronger Senegalese note, add a few drops of lime juice to the broth. Instant dashi powder dissolved in water works fine.

Cooking it at camp

Cook the rice in a camp pot and take the beef straight from the cooler. Mix the yapp mustard and the broth seasonings at home in jars, and it takes 15 minutes on one burner. Hard-boil the eggs if you prefer.
