Twice-Cooked Lamb Ceebu Yapp with Mustard-Caramelised Onions
Overnight-marinated lamb on the bone braised in stock, then crisped in a hot oven; the strained broth cooks the rice, and a butter-glossed caramelised onion sauce goes on top.
Method
Pound the garlic, parsley, pepper and coarse salt in a mortar to a rof paste and stir in the juice of half the lime. Score the lamb every 2 cm, rub the paste right into the cuts, put it in a lidded container and refrigerate for at least , ideally overnight.

Scrape the paste off the meat and keep it, then pat the meat dry. Heat most of the oil in a heavy 20 cm pot over medium-high heat until it just smokes, add the lamb and sear for , leaving each side untouched until it has a deep brown crust. Set the meat aside.

At the same time, put the onions and the rest of the broth in a small pan over medium heat and reduce for , then take it off the heat and stir in the butter and remaining lime juice until glossy. Cook's tip
Don't rush the onions: they only get their sweetness and depth when deep brown. Finishing the meat over charcoal instead of in the oven gives a smoky flavour like Senegalese dibi. If the broth is very salty, dilute it with water before cooking the rice.
Cooking it at camp
Marinate and braise the lamb at home, cool it and bring it in its broth in the cooler. At the campsite, cook the rice in the broth and crisp the meat on a charcoal grill, which is even better than the oven.
