Cook's tip
The colder the balls, the less they spread and the crisper the edges. Press through a square of baking paper so the meat doesn't stick to the spatula. Mixing in half minced lamb brings it closer to the flavour of ceebu yapp.
Cooking it at camp
Make the onion jam and rof mayo at home and bring them in jars. At the campsite, just get a griddle or cast-iron pan very hot over the burner or coals and smash the patties. Take the minced beef straight from the cooler and cook it on the first day.
