Sonoran-Style Bacon-Wrapped Completo (Chilean × Mexican)
Bacon-wrapped frankfurters in a soft bun with cumin black beans, pico de gallo, plenty of avocado and chipotle mayo: Chile’s completo meets the Sonoran hot dog.
Method
Make the pico de gallo: seed the tomatoes and dice them 5 mm; chop the red onion and seeded jalapeño very finely. Mix with the coriander, half the lime juice and part of the salt and leave 10 minutes for the flavours to come together.

Mash the avocado roughly with a fork with the rest of the lime juice and part of the salt. In another bowl, stir the mayonnaise with the chipotle: that is your chipotle mayo. Adjust the heat with the amount of chipotle.

low heatSpread the black beans inside the buns and add the bacon-wrapped frankfurters. Top with pico de gallo and avocado, drizzle with chipotle mayo in a zigzag and eat straight away.
Cook's tip
Use thin bacon so it crisps in the time the frankfurter heats through. If the end of the bacon unwinds, start cooking seam-side down. For no heat, swap the jalapeño for green bell pepper.
Cooking it at camp
Wrap the frankfurters at home and carry them in the cooler. At the campsite, cook them slowly over indirect heat on the grill (the side without coals), rolling them, so the bacon fat doesn’t flare. Warm the beans in a small camping pot and the buns in foil at the edge of the grill.
