About servingsHomemade mayonnaise uses raw egg. For young children, pregnant women, older people or anyone with weak immunity, use a pasteurised egg or shop-bought mayonnaise. Keep it refrigerated and eat within 2 days.

Method

  1. In a narrow jar that a stick blender just fits into, add the egg, mustard, part of the lemon juice, part of the salt and the oil, and let it settle for 1 minute so the oil floats on top. Set the blender head flat on the bottom, switch on and, as it turns thick and white, slowly lift it up; in about 1 minute you’ll have thick mayonnaise. Chill it.

Add in this stepVery fresh egg (ideally pasteurised) 1Dijon mustard ½ tspLemon juice 1.6 tspSalt ⅛ tspSunflower or other mild oil (for the mayo) 150 ml

  2. Seed the tomatoes and dice them 5 mm; seed and very finely chop the chilli. Mix with the coriander and part of the salt and leave in a sieve for 10 minutes to drain. It’s a light take on Chilean pebre.

Add in this stepTomatoes 2Green chilli ½Fresh coriander, chopped 2 tbspSalt ¼ tsp

  3. Mash the avocado flesh with the rest of the lemon juice and part of the salt, until smooth but with a little texture. Press cling film onto the surface to stop it browning.

Add in this stepRipe avocados 2Lemon juice 2.4 tspSalt ¼ tsp

  4. Heat water in a 18 cm pot and hold it on medium-low heat (steaming, just trembling at the edges). Warm the frankfurters for until hot through, then lift out, pat dry and score them shallowly on the diagonal.

    Add in this stepFrankfurters 4

    medium-low heat
  5. Melt half the butter in a 24 cm frying pan and fry the frankfurters on medium-high heat for , rolling them, until the cuts open and they are browned in spots. Lift them out.

Add in this stepButter 10 g

    medium-high heat
  6. Split the buns along the top and spread the insides thinly with the remaining butter. Toast them cut-side down in the same pan on medium heat for , until golden and crisp, in batches if the pan is small.

Add in this stepButter 10 gLong soft hot dog buns 4

    medium heat
  7. Put a frankfurter in each bun, add the tomato pebre and spread a thick layer of avocado on top. Pipe the homemade mayonnaise over in a zigzag and serve straight away.

Cook's tip

If the mayo splits, put 1 tsp mustard and 1 tbsp water in a clean jar and blend in the split mixture a little at a time to bring it back. Everything emulsifies best at the same (room) temperature. Keep homemade mayo in the fridge and use it within 2 days.

Cooking it at camp

At a campsite, use shop-bought mayonnaise rather than raw-egg mayo. Score the frankfurters and roll them on the grill; butter the cut buns and toast them at the edge of the grate for 30 seconds. Keep the avocado and tomatoes cold in the cooler and prepare them just before eating.
