Thai Red Curry Coconut Dal with Lemongrass Tadka
Indian meets Thai: red lentils simmered with Thai red curry paste and coconut milk, topped with a crackling lemongrass and lime-leaf tadka.
Method
Rinse the red lentils 3 to 4 times until the water runs clear (no soaking needed). Finely chop the shallots, grate the ginger and thinly slice the garlic. Bash the lemongrass with the back of a knife and very thinly slice only the tender lower part; tear the lime leaves off their central stem; slice the chilies.

Cook's tip
Curry pastes vary a lot in heat and salt, so start with two-thirds of the amount, taste, then add more. No lime leaves? A little grated lime zest at the end gives a similar perfume.
Cooking it at camp
Great for camping: red lentils need no soaking and canned coconut milk needs no cooler. Cook everything in one pot and make the tadka in a steel mug. Warm flatbread works instead of rice.
