Dal Tadka (Tempered Yellow Lentils)
India's everyday comfort dish: slow-simmered yellow lentils finished with a sizzling pour of ghee, cumin and garlic.
Method
Rinse the dal in a bowl, rubbing it with your hand and changing the water 3 to 4 times until it runs almost clear, then soak it in fresh water for 30 minutes. Meanwhile, finely chop the onion and tomato, grate the ginger and masala garlic, thinly slice the tadka garlic and slit the green chili lengthwise.

Cook's tip
With a pressure cooker, cook step 2 on medium for 3 to 4 whistles (about 12 minutes) and let the pressure drop on its own. Dal thickens as it cools, so loosen it with a little hot water when reheating.
Cooking it at camp
Soak the dal at home and pack it drained in a zip bag to cut the cooking time on site. Red lentils need no soaking and cook in about 20 minutes, which makes them even handier for camping. Make the tadka in a steel mug or a small pot lid.
