Cook's tip

Potatoes work instead of cassava (boil them a little less). For more heat, add a chopped green chilli with the garlic. A spoonful of plain yoghurt on the side balances the spices beautifully.

Cooking it at camp

Make the keema and the cassava purée at home and pack them separately; at camp just layer them in a cast-iron pot, cover and warm over low heat for 15–20 minutes. Embers on the lid help the cheese melt.
