Caramelised Onion Carne Seca Escondidinho with Coalho Crust
Restaurant-style escondidinho: crisp-edged carne seca on butter-caramelised onions, piped garlic cream-cheese cassava purée and a crackly cheese crust.
Method

Drain the beef, put it in a 18 cm pot with the bay leaf and cover with fresh water by 3 cm. Bring to the boil on high heat, skim, then simmer on medium-low heat for until it pulls apart easily with a fork. Save a ladle of the cooking broth, then tear the beef into fairly chunky shreds, discarding fat and gristle.

Cook's tip
Don't rush the onions: slow cooking over gentle heat gives the sweetness and deep colour. When crisping the beef, resist stirring constantly or it will just steam. Never purée cassava in a blender; it turns gluey, so always use a sieve or ricer.
Cooking it at camp
Cook the beef and cassava and make the purée at home, then pack them in a cooler. At camp, fry the onions and beef in a cast-iron pan, top with the purée and cheese, put the lid on with embers on top and bake for 10–15 minutes until the cheese is melted and golden.
