Crispy Cassava Escondidinho Cups
A party-ready bite: cassava dough baked into crisp cups in a muffin tin, filled with creamy carne seca and topped with melted cheese.
Method

Drain the beef, put it in a 18 cm pot and cover with fresh water by 3 cm. Bring to the boil on high heat, skim, then simmer on medium-low heat for until it pulls apart easily, then shred it very finely; fine shreds pack neatly into the cups.

Cook's tip
A wet dough makes the cups slump, so let the boiled cassava steam dry well. A silicone muffin tin makes unmoulding much easier. Reheat leftovers in an air fryer at 180 °C for 5 minutes to make them crisp again.
Cooking it at camp
Bake and cool the cups at home and take them in an airtight box in the cooler. At camp, warm them in a cast-iron pan with the lid on over low heat for 8–10 minutes, until the bottoms are crisp and the centres hot.
