Cook's tip
Use two corn tortillas stacked together so they don't tear. The chicken keeps for 3 days in the fridge and is also great over rice or in a wrap.
Cooking it at camp
Make the chicken at home and simply reheat it in a pot at camp. Warm the tortillas straight on the grill grate, and mix the salsa on site so it stays fresh.
