Cook's tip

Starting in a cold pan over gentle heat lets the fat under the skin melt away so the skin turns truly crisp. Braise a day ahead and chill the legs in their sauce: the fat sets on top for easy removal and the flavour deepens.

Cooking it at camp

Do the braising at home and pack the sauce and duck separately in a cooler. At camp, warm the sauce in a pot and re-crisp the duck skin side down on a grill or in a cast-iron pan over medium-low heat.
