Cook's tip

Shells alone work, but prawn heads make the bisque far deeper. To skip the wine, use the same amount of stock plus 1 teaspoon of lemon juice. Serve with sambal or chili flakes if you like heat.

Cooking it at camp

Make the bisque at home, cool it and carry it in a bottle. At camp, one pan cooks the prawns and noodles and the butter finish takes about 15 minutes. Keep the butter, cream and prawns cold in the cooler.
