Cook's tip

You can also lay the omelette on top of the noodles and slit it open so it drapes over. The noodles should be moist to suit the egg, so don't hold back on stock. Fry all the noodles first, then make the omelettes back to back so everything is served warm.

Cooking it at camp

Bring the prawn stock from home. At camp, fry the noodles in one wide pan, wipe it with kitchen paper and make the omelettes in the same pan. Keep the eggs, prawns and mayonnaise in the cooler and use them on day one.
