Cook's tip

The secret to depth is pressing the prawn heads until they release red oil. Keep leftover lard in the fridge for fried rice or greens. If you can't find back fat, trim the fatty layer from pork belly instead.

Cooking it at camp

Make the lard, crisps and prawn-head stock at home; at camp you just wok-fry. Cook one portion at a time on a strong burner and keep the seafood iced for day one.
