Add in this stepCoriander (or shredded perilla leaves) 5 gToasted sesame seeds ¾ tsp

Cook's tip

The crust forms only if the pan is properly hot before the rice goes in and you resist stirring. If coriander isn't your thing, use shredded perilla leaves. For fully set yolks, cover the eggs for 1–2 minutes more.

Cooking it at camp

Poach the chicken at home and bring it chilled with its stock, so at camp you just cook the rice and crisp it. A cast-iron pan or griddle makes a particularly good crust. Mix the sauce ahead in a jar.
