Cook's tip
The glaze burns easily, so brush it on only at the end. Barely wet your hands; too much water makes the rice mushy. Wrap leftovers in cling film, refrigerate and reheat in a pan the next day.
Cooking it at camp
Shape the onigiri at home, bring them chilled and grill them on a campfire grate or pan for a great breakfast. They contain mayonnaise, so keep them in the cooler and eat them the same day.
