Cook's tip

Make the omelettes one at a time for the best shape. If the pan is too hot the underside browns and turns rubbery, so keep the heat where the butter foams but does not burn. For less heat, use plain ketchup instead of sriracha; for more Thai punch, add a chopped bird's eye chilli to the rice.

Cooking it at camp

Make the fried rice in a cast-iron pan on the stove, and the omelettes in a small non-stick pan if you have one. If a soft omelette is tricky, top the rice with scrambled eggs: it tastes just as good. Keep eggs and chicken in the cooler.
