Sheet-Pan Crispy Khao Pad with Jammy Eggs
Thai fried rice baked flat on a tray until the bottom turns crackly, topped with jammy eggs and a chilli fish-sauce mayo. No wok needed.
Method
Preheat the oven (oven) to 230 °C and line a 20×30 cm baking tray with baking paper. The wider the tray, the thinner the rice layer and the crispier the result.

Cook's tip
A thick layer will not crisp, so use a big tray or two trays for 3–4 servings. If the bottom is not crunchy enough, give it 5 more minutes on the lowest oven shelf. Using prawns instead of chicken? Add them only for the last 8 minutes.
Cooking it at camp
No oven? Press the seasoned rice into a lidded cast-iron pan and leave it on low heat for 10–12 minutes to form a crust. Cook the chicken in the pan first, then mix it into the rice. Boil the eggs at home and bring them in the cooler.
