Khao Pad Pu (Thai Crab Fried Rice)
Bangkok restaurant-style crab fried rice: the rice is coated in egg first for a golden finish, with big lumps of crab folded in at the very end.
Method
Make the prik nam pla: slice the chillies into thin rings and mix with the fish sauce and lime juice. Run your fingertips through the crab to pick out any bits of shell while keeping the lumps as whole as possible. Mix the soy sauce, fish sauce, oyster sauce and sugar in a small cup, and beat the eggs in a bowl. Separate the rice grains with wet hands, chop the garlic, and cut the spring onions and celery into 2 cm lengths.

Cook's tip
Home burners are weaker than restaurant ones, so 3–4 servings taste best fried in two batches. Freshly steamed and picked crab is best; if using frozen crab, thaw it and squeeze it dry in kitchen paper. Lard gives the classic savoury aroma, but oil works fine.
Cooking it at camp
At the campsite, canned crab or prawns are easier to keep. Cook and cool the rice at home, and fry 1–2 servings at a time on a camping stove. Keep the crab in the cooler below 5 °C and use it on the first day.
