Gochujang Rosé Marry Me Chicken Rice Bowl
A Korean-fusion rice bowl: bite-size seared chicken breast simmered in a spicy gochujang and sun-dried tomato rosé cream sauce, piled over warm rice.
Method
Cut the chicken into 3 cm cubes, sprinkle with salt and toss with the potato starch. The thin coating keeps the meat juicy and helps the sauce cling. Slice the spring onions, keeping the white and green parts separate, and chop the garlic.

Heat the oil in a 24 cm pan over medium-high heat, spread the chicken in a single layer and cook for , turning, until golden on all sides. Move it to a plate; it does not need to be cooked through yet.

Cook's tip
Gochujang brands vary in heat and sweetness, so start with less and taste before adding more. For extra heat, add a pinch of Korean chili flakes. If the sauce gets too thick, loosen it with milk or water 1 tbsp at a time.
Cooking it at camp
Cook the rice first in a camping pot, then make the chicken and sauce in one pan. Cut, salt and starch the chicken at home and carry it in a sealed bag to save effort on site. Keep the cream in the cool box.
