About servingsUses boneless, skin-on chicken thighs (about 120 g each), 2 per serving.

Method

  1. Pat the thighs dry with kitchen paper and trim any fat hanging past the skin with scissors. Salt both sides evenly, set them skin-side up on a plate and leave uncovered in the fridge for 30 minutes. The skin dries out and crisps far better.

  2. Pat dry again and season with pepper. Brush a cold 26 cm pan with the oil, lay the thighs in skin-side down, then turn the heat to medium heat. Cook for without moving them, pressing lightly with a spatula. When the skin is deep golden and releases from the pan on its own, flip and cook for more, then move to a plate skin-side up. If the pan size shows ×2, cook in two batches.

Cook's tip

Crisp skin comes from starting in a cold pan and rendering the fat slowly over medium heat; high heat from the start burns the skin before the fat melts. No wine? Use extra stock plus 1 tsp lemon juice.

Cooking it at camp

A heavy cast-iron pan on one burner works well. Salt the chicken at home and pack it in an airtight container so it brines on the way. Camp burners have a hot spot, so rotate the thighs now and then, and add the butter only after the flame is off.
