Matcha Pineapple Cakes with Lime (Taiwanese × Japanese)
Japanese green tea meets Taiwan's gift pastry: a slightly bitter matcha shortbread around a quick, lime-bright pineapple jam.

Preheat the oven to 160 °C; the lower heat keeps the crust green. Divide the dough and filling into 8 equal pieces each (about 25 g and 20 g), wrap and seal as in the classic method and press into moulds on a lined tray.

ovenCool for 10 minutes in the moulds, unmould and cool on a rack. Best after a night in an airtight box.
Cook's tip
Canned crushed pineapple makes a softer, quicker jam; cook it until truly thick or it will bleed through the crust. Use a vivid green culinary matcha: dull matcha turns khaki in the oven.
Cooking it at camp
Bake at home and pack them in a rigid box; they keep for several days at room temperature.
