Cook's tip

Older, sour kimchi works best: it caramelises nicely and its tang balances the rich sour cream. Gochujang brands vary in heat, so taste the sauce before layering. Leave out the bacon and add sliced mushrooms to make it vegetarian (check the kimchi for fish sauce).

Cooking it at camp

Boil the potatoes and eggs and fry the kimchi and bacon at home; keep everything in the cooler. At camp, layer it in a lidded cast-iron pot and bake over gentle embers with coals on the lid for about 25 minutes, until the cheese melts.
