Cook's tip

Squeezing the potato really dry is the secret; wet shreds steam and stay pale. Grease the tin well, or use paper-free silicone cups. For children, pregnant women or older people, bake until the yolks are fully firm.

Cooking it at camp

Without an oven, make it as a skillet version: fry the squeezed potato into a thick rösti in a lidded pan, make small hollows, add the fillings and eggs, cover and cook on low until the whites are set.
