Rakott Krumpli (Hungarian Layered Potato Bake)
Hungary's beloved home bake: layers of sliced potato, hard-boiled egg and smoky sausage, bathed in sour cream and baked until bubbling and golden.
Method
Scrub the potatoes and put them, unpeeled, in a 20 cm pot. Cover with cold water by 2 cm, add half the salt and bring to a boil on medium-high heat. Cook for , until a knife slides in with just a little resistance; they should stay firm enough to slice. Drain and let them cool until you can handle them.

ovenLet it rest for before cutting; the layers settle and it slices neatly. Serve with a sharp pickle or a cucumber salad.
Cook's tip
Use waxy potatoes: floury ones fall apart and turn mushy. Undercook them slightly in step 1, since they finish cooking in the oven. Many Hungarian families add a thin layer of fried onions or swap part of the sour cream for cream for extra richness.
Cooking it at camp
Boil the potatoes and eggs at home the day before and keep them cold in the cooler. At camp, layer everything in a lidded cast-iron pot, set it on low embers with a few coals on the lid and bake for about 30 minutes, checking that the bottom does not scorch.
