Chipotle-Lime Shrimp and Corn Grits (Mexican × Southern)
Smoky chipotle-lime shrimp over grits studded with sweet corn and Monterey Jack, topped with quick-pickled red onion, avocado and crumbled cotija.

Cook's tip
Chipotles are hot; start with less and add adobo sauce to taste. Swap cilantro for scallions if you don't like it. Cut the avocado just before serving so it doesn't brown.
Cooking it at camp
Make the pickle and the shrimp marinade at home and carry them in zip bags in the cooler. The shrimp are also great threaded on skewers and grilled. Use a heavy pot for the grits on a low flame and stir often.
