Charleston Shrimp and Grits with Shrimp-Stock Sausage Gravy
Slow-cooked creamy grits under a gravy built from homemade shrimp-shell stock, a brown roux, smoked sausage and the Cajun trinity.
Method
Peel the shrimp, cut along the back and pull out the dark vein, saving all the shells and heads; keep the shrimp in the fridge. Put the shells, water and bay leaves in a 16 cm pot, bring to a boil on high heat, then lower the heat and simmer for . Strain, pressing the shells hard with a spoon to get every bit of flavour: this is your shrimp stock.

Cook's tip
Soaking stone-ground grits overnight and cooking them in their soaking water makes them faster and creamier. No andouille? Use any spicy smoked sausage or cured chorizo. Make extra shrimp stock and freeze it for risotto or seafood soup.
Cooking it at camp
Make the shrimp stock and gravy base at home and carry them chilled, so at camp you just reheat and cook the shrimp. The grits need a long, gentle simmer, so a heavy pot and a low flame are essential. Keep shrimp on ice at 4 °C or below.
