Shrimp and Grits
The Lowcountry classic: creamy grits rich with butter and sharp cheddar, topped with garlicky lemon shrimp cooked in bacon fat.
Method
Bring the water, milk and part of the salt to a boil in a 18 cm pot over medium-high heat, about . Whisking constantly, pour in the grits in a slow, thin stream; tipping them in all at once makes lumps.

medium-high heatTurn the heat down to low heat, cover and cook for , stirring and scraping the bottom every 3–4 minutes. Grits bubble and spit, so stir carefully. They're done when creamy and soft with no gritty bite; add a splash of water if they get too thick.

Cook's tip
No grits? Coarse polenta is the closest substitute. Instant grits are quick but lack flavour and texture. Cook the shrimp fast and last so they stay juicy. Leftover grits set firm as they cool; rewarm with a splash of milk, stirring, and they turn creamy again.
Cooking it at camp
Two burners are plenty: cook the grits first and keep them covered, then do the bacon and shrimp. Keep shrimp on ice in the cooler at 4 °C or below. Thin camp pots scorch grits easily, so use the lowest flame and stir often.
