Som Tam Chicken Tacos
Thai meets Mexico: fish-sauce-and-lime chicken thighs grilled and tucked into corn tortillas with crunchy som tam slaw and avocado-lime crema.
Method
Finely chop half the garlic and juice a quarter of the limes. Massage the chicken with the fish sauce, brown sugar, oil, chopped garlic and lime juice and marinate in the fridge for at least . Overnight is fine, but not longer: the lime starts to make the meat mushy.

Cook's tip
Double up the corn tortillas so they don't tear. Half cucumber, half carrot strands make a great stand-in for green papaya. Grilling the chicken on a barbecue adds smoky flavour.
Cooking it at camp
A perfect camp dish. Marinate the chicken at home and carry it in its zip bag in the cooler, then cook it over charcoal or in a cast-iron pan on the burner. Warm tortillas straight on the grill grate and toss the slaw right in a zip bag.
