Ugali-Sukuma Cheese Waffles
A brunch twist: soft ugali mixed with sautéed collards, cheddar and egg, cooked crisp in a waffle iron and dunked in a chilli-lime yoghurt.
Method
Bring the water to the boil in a 18 cm pot, turn down to medium-low heat and sprinkle in the maize meal a little at a time, whisking so no lumps form. Switch to a wooden spoon and stir for into a thick but soft dough, like mashed potato. It should be softer than normal ugali because it has more water. Transfer to a bowl and let it cool for about 10 minutes, until you can touch it.

Cook's tip
No waffle iron? Shape the mixture into palm-sized patties and fry in an oiled pan on medium for 3 to 4 minutes per side. With leftover ugali, mash it with a little warm water until soft before mixing. If the waffles stick, the iron wasn't hot or oiled enough.
Cooking it at camp
At the campsite, use a stovetop waffle pan or toastie maker over the burner, turning it over and cooking on medium-low. Mix the batter at home and carry it in the cooler.
