Ugali with Coconut Sukuma and Kachumbari
A coastal Kenyan spread: blanched, bright collards in a garlic, ginger and coconut milk sauce, ugali with a toasty crust, and a fresh kachumbari tomato salad.
Method
Make the kachumbari. Soak the sliced red onion in cold water for 5 minutes and drain; this takes the harsh edge off. In a bowl combine the diced tomato, red onion, chilli and coriander, add the lime juice and part of the salt, toss gently and chill until serving.

medium heatTurn the ugali out onto a plate crust side up and serve with the coconut sukuma and the cold kachumbari.
Cook's tip
Blanching and chilling the greens is what keeps their colour and bite. Coconut milk can split if boiled hard for long, so stay on medium. Make the ugali crust only on low heat so it toasts without burning.
Cooking it at camp
Chop the kachumbari ingredients at home and just dress them with lime and salt at the campsite. Instead of blanching, you can cook the greens a minute or two longer in the sauce. With two burners, make the ugali and sukuma at the same time.
