- A citrus with sweet, tangy juice and a strongly fragrant peel. The juice adds acidity and sweetness to meat marinades; the zest perfumes breads and bakes.
- Typical dishes and uses
- Taco marinades (carnitas, al pastor), served with feijoada, hot cross bun zest, duck à l'orange
- Substitutes
- 100ml orange juice = 100ml mandarin juice or 100ml unsweetened orange juice + 1 tsp lime juice.
- Storage
- 1 week at room temperature, 3–4 weeks in the fridge. When zesting, grate only the outer peel; the white pith is bitter.
