- Flavor and role
- A sweet-hot chili sauce made from red chilies, garlic, vinegar and sugar. Drizzled on to finish, it adds heat and tang.
- Typical dishes and uses
- Pho condiment, fried rice, burgers, sriracha mayo (mixed with mayonnaise)
- Substitutes
- 1 tbsp sriracha = 1/2 tbsp gochujang (Korean chili paste) + 1/2 tsp vinegar + 1/2 tsp sugar + a little minced garlic, or 1 tsp hot sauce + 2 tsp ketchup.
- Storage
- Unopened: 2 years at room temperature. Opened: 1 month at room temperature, 6-12 months in the fridge (still fine to eat if the colour darkens).
